“"This is the coffee we ship by default if you sign up for our subscription and don't pick a specific roast — and the reason it's the default is that we drink it ourselves at the cafe almost every day. It's a Costa Rican washed-process coffee from a farm we've been buying from for four years now. Tasting notes: stone fruit on the front (peach and nectarine, more than apricot), a slight orange-zest brightness in the middle, and a clean finish that gets sweeter as it cools. — Roast level: medium. We don't dark-roast anything; we never have, even when our distributor told us we'd sell more if we did. Dark-roasted coffee can be great, but it's not what we're built to make. — How to brew it: this coffee shines as a pour-over (V60 or Kalita), but it's also gorgeous as an espresso if you have an espresso machine you trust. We don't recommend it for cold brew — there are better single-origins for that, and we'll send you one if you ask. — Ships every two weeks. Pause anytime. We roast on Mondays; your bag goes out Tuesday and lands on your doorstep within 48 hours of being roasted.
